Healthy Sloppy Joes
I am always looking for recipes that are healthy and that my teenagers will like and request again. That's how you know it was a hit! Tonight, I made this family favorite and even my daughter's boyfriend kept commenting on how good it smelled and he couldn't wait to have it. Woohoo! Love these little mom victories!

INGREDIENTS
1 tsp olive oil
1 c chopped onion
1 red, yellow and orange pepper chopped
5-10 stalks chopped celery
1 handful of baby carrots chopped
1 lb ground turkey
1/4 c organic ketchup
1 tbls red wine vinegar
1 tbls Worcestershire sauce (or maybe a little more)
1 tsp dried oregano
salt & pepper
DIRECTIONS
Heat oil in a large skillet over medium-high heat.
Add all all ingredients from onion through ground turkey.
Saute 5 minutes until meat is browned, stirring to a crumble and draining any fat that is created.
Stir in the rest of the ingredients and bring to a boil.
Cover, reduce heat, and simmer 20 minutes, stirring occasionally.
Serve and enjoy.
My hubby & I had ours in a bowl, but I served it on toasted hamburger bun for the kids.
I have put these sloppy joes over spaghetti squash and zoodles too.
