Southwestern Veggie Taco from the Ultimate Reset
I discovered the super easy recipe while doing the Ultimate Reset and it became one of my favorites. I kept it as is, but added tilapia to make it a fish taco for my kids, and THEY LOVED it. You know when they keep asking for it, it’s a success! This is definitely one that we will do long after the UR is over!
1/4 medium avocado, mashed
2 tbsp. fresh pico de gallo (salsa)
11/4 cup black beans and Rice (recipe below)
1/4 cup cooked corn kernals
Combine and serve!
Black Beans and Rice
1/2 cup canned low sodium black beans drained
1/4 tsp. Extra virgin olive oil
1 dash chili pepper
1 pinch cumin
1/4 tsp.ground coriander
1tsp. Bragg Liquid Aminos
Himalayan salt (optional)
3/4 cup cooked brown rice
Combine beans, oil, chili powder, cumin, coriander, Bragg liquid aminos, and salt in a medium sauce pan; mix well. Heat mixture over medium heat for 1-2 minutes, or until heated through. Remove from heat, Gently fold rice into bean mixture. Serve immediately.
