Whole 30 Pulled Pork Carnitas
Our family loves Mexican food, so I am always looking for healthy recipes to feed them. This is one of our favorites. My kids ask for it every week! I love the fact that I can make this recipe during the day, so that when I am gone all afternoon and into the evening driving my kids around to their sports and other activities, we still have a delicious. healthy, clean dinner waiting for us, without the stress! PREP TIME: 15 minutes COOK TIME: 2 hours 45 minutes
Ingredients: 1-1/2 tbsp salt 1 tbsp black pepper 2 lbs pork butt ( I used 7 lbs because of my 4 teenagers) 1/2 medium onion, roughly chopped 3 cloves garlic, minced 1/2 tsp chili powder 1/4 tsp ground cinnamon 1/4 c sliced green onion juice of 1/2 a lime
Preheat oven to 350*
Salt and pepper the pork butt evenly
In a heavy pot or dutch oven over medium heat, melt the cooking fat, swirling to coat the bottom. When the fat is hot, add the pork and brown all side-3-4 minutes per side. Remove pork and set aside.
In the same pot reduce the heat to medium low, add the onion and cook til translucent, 405 minutes. Add the garlic and cook, stirring vigorously to prevent burning, about 1 minute. Add 1 C of water, chili powder, and cinnamon. Increase the heat to medium high, returning the pork and bring to a boil.
Cover the pot with a lid. Transfer to the oven and bake for 2 1/2 hours, turning the meat after each hour. The pork should be fork tender when done.
Shred the pork, discarding any excess fat. Incorporate the cooking liquid from the pot, add green onion and lime juice. Season with 1/2 tablespoon of salt.
Serve with tortillas or over a bed of lettuce along with avocado and salsa. Add cheese if desired.
You can also put in the crock pot for 8-10 hours. Enjoy!
